I have exported the Transaction Data Output report to Excel. The dates are exporting as text, but I would like Excel to recognize them as dates (so they can be sorted). How can I do this?

Instead of selecting the Excel button (or File | Export to Excel), select File | Save as XLS. Then open the saved file with Excel. Excel will recognize the dates as such and format them as dates. Excel will even convert the "Mar 20 07" format used by Navigator to a sort-freindly "3/20/2007".
